Strawberry Poke Cake With Cream

The Poke Cake is a very original cake with a rather strange name. This dessert of American origin  is characterized by having holes that are filled with some kind of liquid or semi-liquid preparation.

For this recipe we will use strawberries with cream. However, the options are many: they can be juices, juices, sauces, syrups, even custard.

A high calorie recipe, but what would life be without these delicious treats?

Ingredients

For the cake

  • 200g sugar
  • 100 g margarine
  • 250 g flour
  • 5 g yeast
  • 2 g baking soda
  • 100 ml milk

For the strawberry syrup

  • 50 ml coconut milk
  • 50 ml of water
  • Fresh strawberries
  • 70g sugar

Cream

  • 100g egg whites
  • 200g sugar
  • 1 pinch of salt

Preparation

  • First, we beat the margarine, which must be at room temperature, with the sugar and dissolve the granules well.
  • Next, we add the eggs one by one. We continue beating until obtaining a homogeneous mixture.
  • Once we have this, we can preheat the oven to 150 ° C.
  • Then, add half the flour to the mixture , the yeast sifted in a strainer to avoid lumps, and add the milk.
  • After incorporating the milk, we can add the rest of the flour and the baking soda. Remember that  you must be beating vigorously.
  • Then, we flour and butter a round baking pan (although it can be the type you want), and pour the mixture inside.
  • Finally, we let it bake for 45 minutes and when it is ready we let it cool.

Syrup

While you wait for your cake to be ready, you can prepare the strawberry syrup.

  • First, dice the strawberries, dissolve the sugar in the water, and add the strawberries. Let them sit for 20 minutes.
  • Next, heat the mixture over medium heat and add the coconut milk. Stir until you achieve a consistent, slightly thick mixture.
  • Once it’s ready, let it sit until it cools down.

Assemble the Poke Cake

Now we must assemble our entire recipe, you will see how it is not difficult.

  • First, unmold your cake on a tray lined with parchment paper or a large plate.
  • With a small spoon, begin to make large holes in the cake without transferring it to the other side, so that the liquid does not spill. It is important that the cake has cooled down a bit, otherwise it will fall apart on contact with the spoon or you may burn yourself.
  • Next, take the syrup and fill each of the holes with it.
  • Try to be generous, your Poke Cake will taste better.
  • Save some of the syrup for later.
  • Finally, you should take it to the fridge and leave it there for half an hour so that the filling is established inside the cake, also put the syrup that you have reserved in the fridge.

    While you wait for the cake to cool, proceed to prepare the cream.

    • First, put the egg whites in a bowl in a double boiler and add the salt.
    • Then start to stir them until they are stiff.
    • Then add the sugar slowly and keep beating.
    • You will know that it is ready because once the sugar has dissolved and the whites reach the point of snow, the mixture will shine a little.
    • After half an hour, take the cake out of the fridge and cover it with the syrup you reserved, trying to cover the entire surface.
    • Afterwards, decorate it with the cream that you have prepared, taking care not to stain it with the syrup.
    • Now, take a few more strawberries and slice them, or use them whole and decorate the surface of the meringue.
    • Finally, you can add a little cinnamon or crushed cookies, the options are many.

    Once you have done this, you will have your Poke Cake ready to enjoy. Accompany it with a coffee, chocolate or tea, or simply reserve it and enjoy it at any time.
