Carrot And Pineapple Cake

Option 1: Carrot and pineapple cake

This delicious carrot and pineapple cake can be enjoyed on a special occasion or at snack time. Of course, consume it in moderate portions to respect your diet.

Ingredients:

  • 2 and ½ cups of flour (500 g)
  • ½ teaspoon of salt (5 g)
  • 1 teaspoon of yeast (5 g)
  • 1 teaspoon of ground cinnamon (5 g)
  • Can of canned pineapple
  • ½ cup of oil (125 ml)
  • 3 eggs
  • 2 cups of sugar (400 g)
  • 2 cups of grated carrot (300 g)
  • Cream cheese (400 g)
  • 1 glass of sugar (160 g)

Process:

  • First you must sift the flour, salt, yeast and ground cinnamon. Mix well.
  • Next, blend the canned pineapple together with its syrup in a blender until it is pureed.
  • Add to the pineapple puree, the eggs, the oil, the sugar and the carrot, mixing manually until a homogeneous mixture is obtained.
  • Little by little add the flour mixture, stirring constantly so that no lumps come out.
  • Grease with butter and flour a baking dish (better if it is round).
  • Bake at 180ºC for about 50 minutes.
  • Let cool before unmolding so that it does not crumble.
  • Meanwhile, beat the cream cheese with the sugar with a few rods until it forms a creamy paste.
  • Once the cake has cooled, cover it completely with the cheese mixture and put it in the fridge to set the coating.

Option 2: Carrot cake with coconut and pineapple

To give a more original and delicious flavor to our carrot and pineapple cake, we suggest adding a little coconut. Likewise, we can improve the flavor with vanilla extract and nuts.

Ingredients:

  • 3 cups of flour (600 g)
  • 2 cups of sugar (400 g)
  • 1 teaspoon of salt (5 g)
  • Pinch of baking soda
  • 1 teaspoon of cinnamon (5 g)
  • 1 and ½ cups of oil (360 ml)
  • 4 eggs
  • Scoop of vanilla extract (7 ml)
  • 1 and ½ cups of chopped walnuts (300 g)
  • 1 and ½ cups of grated sweet coconuts (300 g)
  • 2 cups of carrot, peeled and grated (400 g)
  • Pineapple in syrup (without the syrup)
  • 1 package of cream cheese at room temperature (Philadelphia type)
  • 6 tablespoons of unsalted butter at room temperature (60 g)
  • 1 teaspoon of vanilla extract (3 ml)
  • 2 teaspoon of lemon juice (20 ml)
  • 2 and ½ cups of icing sugar (500 g)

Process:

  • First, preheat the oven to 180ºC.
  • Grease two round sponge molds (the same diameter) with butter.
  • Mix all the dry ingredients (flour, sugar, salt, baking soda and cinnamon) in a bowl.
  • Add the oil, eggs and vanilla. Stir well.
  • Add the walnuts, grated coconut, grated carrots, and pureed pineapple. Beat with the mixer until smooth.
  • Put half of the mixture in one of the molds and the other half in the other.
  • Bake for 45-50 minutes or until a toothpick pokes it clean.
  • Let the cakes cool on a rack.
  • Meanwhile, prepare the topping. To do this, beat the cream cheese with the butter and gradually add the icing sugar, beating until there are no lumps. Finally, add the lemon juice and the vanilla extract.
  • When the cakes are cold, cover the surface of one of them with topping, place the other on top and cover the top and sides with the cheese topping.
  • Decorate, if you like, with whole walnuts.
