Alfajores Dipped In Chocolate

Alfajores are a typical sweet in the Spanish-speaking culture that has two variants: Hispanic-American and Spanish. In Spain, alfajor is a typical Andalusian Christmas sweet that is made from a paste of almonds, walnuts and honey. It can be in the shape of a croquette or it can consist of two wafers of wheat flour and honey paste in the middle.

The Latin American alfajor only keeps the option of the two wafers with the filling in the middle, although the wafers are normally cookies and the filling is usually dulce de leche, although they can also be fruits or chocolate.

In addition, the Latin American alfajor can be covered with chocolate. The latter are the ones that we are going to teach you to make here: the alfajores dipped in chocolate.

1. Argentine alfajores with dulce de leche bathed in chocolate

This variety of alfajores with a chocolate bath corresponds to the one made in Argentine gastronomy. It is a very easy recipe to prepare that, without a doubt, your whole family will crave.

Ingredients:

  • 500 g of flour
  • 2 teaspoons yeast
  • 4 tablespoons of icing sugar
  • 250g butter
  • 2 tablespoons of milk
  • 2 tablespoons of water
  • 1 egg yolk
  • Caramel sauce
  • 300 g of covered chocolate
  • 1 tablespoon of butter for the chocolate

Preparation

  • First, mix the flour with the icing sugar in a bowl and add the butter softened at room temperature, little by little, crushing it with a fork until it has been incorporated, so that the mixture looks like oatmeal.
  • Make a hole in the center and pour in the milk, water and the yolk. Knead gently until the dough is uniform.
  • Cover the bowl with plastic wrap and let it rest in the fridge for 30 minutes.
  • Preheat the oven to 150ºC.
  • Next, remove it from the fridge and place the dough between two transparent films so that it does not break.
  • Roll out with a rolling pin until the dough is 1 cm thick.
  • Remove one of the plastics and cut dough discs with the help of a wine glass (or a round cutter. Depends on how professional one is).
  • Then grease with butter, or cover a baking sheet with parchment paper. Place cookies on top and bake for 15-20 minutes or until lightly golden.
  • Remove from oven and let cool.
  • When they are cold, place a teaspoon of dulce de leche in half of the cookies and cover with the other half, squashing slightly. Reserve.
  • Melt the chocolate with the butter in a bain-marie, without boiling the water in the lower pot.
  • Place a rack on a platter of the same size and the alfajores on the rack.
  • Pour the chocolate over the alfajores on one side and let them rest slightly. Carefully turn them over and pour the chocolate over the top again .
  • Let them cool in the fridge. When the chocolate has hardened, the alfajores are ready.

2. Alfajores dipped in chocolate

The classic recipe for alfajores dipped in chocolate is ideal to enjoy at snacks or special occasions. Its way of preparation is somewhat similar to the previous recipe.

Ingredients:

  • 3 cups of flour
  • 2 teaspoons yeast
  • 200 g margarine
  • 4 yolks
  • 6 tablespoons icing sugar
  • 8 ml milk
  • 500 g of dulce de leche
  • 500 g of covered chocolate

Process:

  • To begin with, preheat the oven to 150ºC.
  • Meanwhile, sift the flour, sugar and yeast into a bowl and add the softened margarine, mixing well with a fork.
  • Then add the yolks, mixing well until just incorporated.
  • Pour in the milk little by little, stirring constantly, and knead with the tips of your fingers until the dough is smooth.
  • Place the dough in a plastic bag and put in the fridge for 30 minutes.
  • On a previously floured table, roll out the dough until it is 1 cm thick. Cut with the help of a glass of wine or a pasta cutter.
  • Next, on a previously floured baking tray , place the circles and bake for 8 to 10 minutes without turning brown.
  • Let the alfajores cool. C hen are cool, spread half circles with dulce de leche and cover with the other half.
  • Melt the chocolate in a bain-marie and introduce the alfajores until they are completely bathed.
  • They can be decorated with colored shavings.
