This recipe for chicken breast in fruit sauce can be enjoyed both on a plate with garnish (rice, potatoes, salads) and in wheat flour tortillas, as a burrito. 

Ingredients

  • 1 pinch of salt.
  • Olive oil.
  • 1 chicken breast (330 g).
  • 2 teaspoon of sugar (30 g).
  • 1 cup of pineapple in pieces (140 g).
  • ½ glass of wine vinegar (40 mL).
  • 2 tablespoons of lemon juice (30 mL).
  • 2 medium kiwis, peeled and sliced ​​(70 g).
  • 1 tablespoon of chopped fresh coriander (10 g).
  • 1 medium papaya, peeled, seeded and sliced ​​(1 kg).
  • ½ jalapeño pepper, seeded, finely chopped (35 g).
  • ½ tablespoon of red onion, finely chopped (10 g).
  • 1 medium mango, peeled, seeded, cut into chunks (400 g).

Preparation

  • First, grab a cutting board and a thin knife. Peel and cut all the fruits into small pieces. Do not forget to remove the seeds and put them aside. 
  • Once you have done it, place all the fruits in a container, preferably glass, and store it in your refrigerator for 2 or 3 hours. This step is necessary so that the flavor of all the fruits mix with each other.
  • While you wait for the fruits to chill and the flavors to blend; you will work with the chicken breast. Place it on a plate and season it evenly with the jalapeño pepper, half a tablespoon of onion, and a pinch of salt.
  • The idea is to contrast the sweet flavors of the fruits with the spiciness of the chili and the pinch of salt. Once you have the breast ready, place the pan over low heat and proceed to cook the meat.

  • When you have seasoned the breast, proceed to cook (grilled or grill) with just a touch of olive oil so that it does not stick to the pan. This will keep your recommended fat and calorie intake in check.
